Shred the cheese and cut the tomatoes next. I like to take the seeds and liquids out of the tomatoes so the eggs aren't to watery.

Next you mix the cheese, tomatoes, and egg(s) together. I use a fork to mix them for easy clean-up later. You can put the spices of your preference in now.

I came up with this little sandwich yesterday when I need something to eat before work but didn’t want cereal and felt I needed to share it! I love experimenting in the kitchen and I think this is a winner!
I love this recipe when I do not have somewhere to be right after I get up in the morning! This is a good breakfast when you need something to fill you up but don’t want something greasy like McDonald’s. It is very simple to make and also healthy. The most time this probably takes to make is about 10 minutes. There is no oil or grease added and it is very cool to make. I named it Brown Bird Sandwich because of the brown bread used and the eggs.
